Cream chili chicken! 

Not sure where I got this recipe but it was in my recipe box and hasn’t yet been made in this house yet. With Nate working out of town & only coming home twice a week, I really wanted to do something special for dinner. He has his favorite dishes of course but we always eat those so I busted this out for a change! Was it tasty? Yes! Did it make it to the favorite pile? Not yet but I have some ideas for next time! So…

What you’ll need:

  • 4 or 5 boneless, skinless chicken breast
  • 1 8 oz brick of cream cheese, softened  (it says 2 pack but I’m only using 1 of the 2, don’t let that throw you off)
  • 1 4 oz can of diced green chilies
  • About 2 cups of shredded cheese, Colby Jack or mozzarella (I prefer to shred my own)
  • 1 tsp of chili powder 

    Prep

    If you are using frozen chicken breast, thaw them from the freezer and dethaw. About an hour- hour and a half before beginning take your cream cheese out of the fridge to soften. 

    Step 1

    Empty cream cheese package into a small mixing bowl (I used a large cereal bowl and that was perfect)

    Add in your green chiles

    Add in your chili powder and mix!

    Step 2

    Lay chicken breast flat across a 9×13 baking dish. 

    Step 3

    Coat your chicken with cream cheese mixture. 

    Step 4

    Shred your cheese over your chicken or if you are using already shredded cheese, sprinkle it over… either way be extra generous!

    Step 5

    Put your chicken in your over that’s preheated to 375° and set your timer for 35 minutes, then check your chicken to see if done, mine ended up taking 55 minutes this time. Your cheese should also be melted 

    Serve!!

    Garlic Herb bread sticks 

    I found these in the bread isle at Wal-Mart, kind of a random pick up that turned out to be amazing! Really simple! Just had to preheat the toaster oven to 450°, placed on a tray, put them in & set the timer for 8 minutes 

    Take about 2 tablespoons of butter and place in a small dish that you can microwave. Sprinkle a little garlic powder, maybe half a teaspoon. Throw your butter in the microwave for 30 seconds and stir so it’s all melted. 

    Once your bread sticks are done, take them out and immediately spread your butter over top

    Leftovers

    Nate at the chicken the next day as leftover, we ended up shredding the chicken and he ate it in a tortilla shell! 

    Ingredients

    1. Preheat over to 375°
    2. Put cream cheese, chili powder & chiles in a small mixing bowl, mix!
    3. Lay chicken breast across a 9×13 baking dish 
    4. Cover chick breast with cream cheese mixture 
    5. Sprinkle cheese over top of the chicken 
    6. Cook in the oven for 35 minutes and check to see if it’s done, if if is – serve! If not, cook until chicken is all the way cooked.
